EASY APPLE RYE BREAD RECIPE

I love to bake with apples and was excited to get another round of apples from my apple tree. Unfortunately, I am not sure if we will get anything this year.  I did not see any apple flowers on our tree this spring.  So, I will have to buy apples for my baking this year. 

In the Scandinavina countries we like to eat a lot of rye bread.  So I like try to different rye bread recipes and this recipe as shredded apples.   The apple in the recipe makes the rye bread slightly softer and sweeter against the rustic rye flavor.

EASY APPLE RYE BREAD RECIPE 🍎

🌻Ingredients 🌻

  • 2 cups of whole wheat flour
  • 1 cup of rye flour
  • 5 ounces of water
  • 1/2 cup of shredded apples
  • 1 package of yeast
  • 1 teaspoon of salt
  • 1 tablespoon of oil
  • 1 tablespoon of sugar

Bake in the oven for 30 minutes at 425F.  See our instructions on our video on how to make this easy bread.

Serve with butter. You might want to add honey or a slice of cheese as well.  As well a glass of milk, a cup of tea or coffee goes great with the rye bread for either breakfast, lunch or as a snack.

Æbleflæsk – An Old Fashioned Danish Apple Bacon Dish

Do you love the apples and bacon?  Here is any easy dish to make that tastes amazing.   You can easily whip this delicious dish with just a few ingredients for either lunch or dinner. 

So easy to make!


Ingredients:

Per person:
  • 1 apple
  • 3 slices of bacon, chopped
  • pinch of sugar

Instructions:

  1. Cut apple into quarters, Peal the apple, remove the core and cut it into wedges. 
  2. Fry the bacon in the frying pan.  
  3. Remove the bacon from the pan when crisp and add the apple pieces. 
  4. Cook apples till soft in the bacon fat. 
  5. Return the bacon to the pan, mix it  with the apples and sprinkle with a little sugar. 

Optional: Add a small sliced onion and fry it with the apples.  

Serve with rye bread and a side salad. Enjoy!  If a dish has bacon in it, you know it will be good!

This is great for lunch or dinner!

Danish Apple Cake – Herregårdsæblekage

Do you love apple desserts?  This is a delicious Danish apple cake recipe! Our family and friends loves this cake recipe.  We hope you will enjoy it too!



    Ingredients:

    • 13 tbsp butter
    • 2 cups flour
    • pinch of salt
    • 4 oz sugar
    • 1 egg
    • 2 tblsp cream

      Filling

      • 2 lb apples (approx. 5 large)
      • 1/3 cup sugar
      • 1/3 cup raisins
      • 1/2 cups almonds, chopped

       Topping (Remonce)

      • 6 tbsp butter
      • 1/2 cup sugar
      • 1/2 cup chopped almonds

      Garnish (optional)

      • 2 cups whipped cream
      Directions:

      1. Combine the butter with the flour, add salt, sugar, egg and cream.
      2. Let the dough rest in fridge for 1 hour or more before the dough is rolled out in 1/4″ thickness.
      3. Cut the dough into two round cakes- the size of the springform.
      4. The one cake is for the bottom, and the other for the lid, the rest of the dough is for the sides of the springform.
      5. Peel the apples and cut into thin slices.
      6. Layer into the cake-pan and sprinkle with sugar, raisins and chopped almonds.
      7. Add the”lid” and press the edges well together.
      8. Combine the topping, and stir until white.
      9. Spread the topping over the”lid” and puncture the dough with a fork.
      10. Bake in a 375F degree oven for approx. 1 hour.
      11. Serve lukewarm with cold whip cream.

      Æbler i Svøb – A Danish Apple Dessert

      Do you love apple desserts?  This is a delicious Danish apple dessert recipe and easy to make!

       Ingredients:

      • 4-5 Apples (according to size)
      • 9 oz. flour
      • 9 oz butter or margarine
      • 1 pkg yeast
      • 1/3 cup milk, warm
      • 1 whole egg
      • 1 tsp sugar
      • 3 tblsp cinnamon
      • 1 oz sugar
      • raisins and nuts optional


      Instruction:

      1. Add yeast to the warm milk and leave it for approx. 10 min. 
      2. Mix cinnamon and sugar in a bowl.
      3. Add and mix margarine to the flour.  Crumble the margarine into the flour either with your fork or hands.
      4. Add egg and 1 teaspoon of sugar into the yeast milk mixture.  Mix the mixture with a fork.
      5. Pour this mixture into the bowl of flour crumble. Mix it all up and leave it in a bowl for approx. 15 min in the refrigerator. 
      6. Meanwhile peel the apples, cut them in half and remove stem and apple seeds.  Fill the apple opening with the cinnamon/sugar mixture.
      7. Roll out the dough and cut it into 5″X5″squares and wrap it around the half apples. Place the apples on the baking sheet.
      8. Let the apples rest for 15 min. Then, brush with egg wash and sprinkle with cinnamon sugar. 
      9. Bake them at approx. 425F for 20 min.

      Æbleskiver ♥ How to Make Danish Aebleskiver with Apple Filling

      Did you know there are different types of Æbleskiver batter?  There are a variety of aebleskive recipes. Some aebleskive recipes require buttermilk or milk or yeast. Here is our 3rd version using milk and baking powder.



      First step is to make the Apple Filling.  The second step is to make the batter.  Finally. we are ready to make the Æbleskiver!

      Apple Filling Ingredients:

      • 2-3 tart apples, peeled, cored and diced (according to size)
      • approx. 1/4 cup butter
      • 2-3 tblsp sugar
      • 1/4 tsp cinnamon
      • 1/4 tsp cardamom
      Kitchen Tools:
      • large heavy saucepan
      • apple peeler
      • cutting knife
      • cutting board
      • measuring cup
      • measuring spoon
      • mixing spoon

      Instruction:

      Cook the apples in the melted butter with the spices and sugar over medium heat until the apples are tender (approx. 10 min).

      Remove from the heat and use as filling for for the aebleskiver.
       
      Aebleskive Ingredient:

      • 1 cup all-purpose flour
      • 1 1/2 tsp sugar
      • 1/2 tsp baking powder
      • 1/4 teaspoon salt
      • 1/2 tsp cardamom
      • 2 large eggs
      • 1 cup whole milk
      • 2 tblsp melted butter

      What to Serve with Æbleskiver

      • powder sugar for dusting
      • sugar or jam

      Kitchen Utensils:

      • æbleskiver pan (cast iron preferable)
      • 2 mixing bowls
      • electric mixer
      • wooden spoon
      • measuring cup/spoons
      • wooden skewer or knitting pin

      Instruction:

      Whisk the flour, sugar, baking powder and salt together in a bowl. Mix egg yolks with the milk and the melted butter. Add the yolk mixture to the flour mixture and stir till well blended.

      In a separate bowl beat the egg whites till stiff, but not dry. With a spatula fold approx. 1/3 of the egg whites into the batter and finally fold in the rest of the egg whites until no white streaks remain. Now we area ready to bake the aebleskiver right away in the aebleskive pan.

      Add butter to the aebleskive pan and heat up the pan. When butter bubbles add 1 tblsp batter in the pan and add 1 tsp apple filling into the center. Finally add a little batter on top of the filling.

      Cook until the aebleskiver are browned on each side (approx. 3 min each side). Turn with a knitting pin or a wooden skewer.

      Dust with confectioners’ sugar before serving.

      Tip:Æbleskiver can be kept warm in the oven, and they can also be frozen.

      Scandinavian Poached Apples with Prunes and Red Currants for Roast Pork & Goose Christmas dinners

      A quick, simple and elegant side dish.  This is great served with roast goose or pork.



      Ingredients:

      • 2 apples (any of your favorite apples such as Gala, fuji or golden delicious will work) 
      • 1 cup of water 
      • 1/3 cup of sugar
      • handful of prunes
      • red currant jelly 

       Kitchen Utensils:

      • 1 pot deep enough for apples
      • measuring cup
      • knife
      • cutting board

      Directions:

      1. Slice the apples in half and core it. It is optional if you want to leave the peel on.  In this case, we are leaving the peel on which gives it a pretty reddish color.
      2. Fill the bottom of a roomy pot a cup off water. Add the water and sugar.
      3. Place the apples in the pot.  Place sliced side up
      4. Place the pot over the stove on medium high heat
      5. Add some prunes into the pot
      6. Put a lid over the pot which will help the apples cook faster
      7. Check after a couple minutes to see how soft the apples are getting
      8. Check the apples again by piercing it with a knife. You don’t want these apples to fall apart or become mushy.
      9. Remove the apples and prunes with a slotted spoon to a holding plate.
      10. Add a tablespoon of redcurrant jelly in the center of each apple
      11. Serve warm
