Icelandic Flag Cake Recipe to celebrate Icelandic National Day

Icelandic National Day is coming up in a few days. This annual holiday (Icelandic: Þjóðhátíðardagurinn) was chosen to coincide with the birthday of Jón Sigurðsson. Jón is a major figure of Icelandic culture from the 19th century.

Perfect time to start thinking of ways to celebrate and here we came up with an Icelandic Flag Cake which is a fast fun way to serve during the holiday. 🎈  I decided to make a simple cake in comparison to some of the larger flag cakes I have done before.  This cake only requires one baking pan.  If you want to have a filling in the center, you can easily slice it in half.

As well, I have lots of raspberries growing on my raspberry bush.  So luckily I could use the raspberries for the cake.  So I decided to use the red raspberries for the red cross that is on the cake. 
 
As well I purchased fresh blueberries and whipped cream to complete the flag.  I decided to use the whipped cream from a can because I was not make a complicated pattern.  However, I suggest to add the whipped cream at the very last step. The whipped cream fluffiness will start disappearing shortly after shaking it out of the can.  So I suggest to serve the cake right away. 🍴

Icelandic Flag Cake Recipe🌻

🌻 Ingredients 🌻

  • 1/4 cup of sugar
  • 1/2 a stick of unsalted butter
  • 2 eggs
  • 1 cup of flour
  • 1/2 tablespoon of baking powder
  • 1/4 teaspoon of salt
  • 1/2 cup of milk
  • 1/2 teaspoon of vanilla
  • confectionary sugar and couple drops of water
  • blueberries
  • raspberries
  • whipped cream

  1. Beat butter and sugar.
  2. Add 2 eggs.
  3. Add flour mixed with baking powder and salt. 
  4. Add milk w/vanilla extract.
  5. Pour batter into a buttered & floured pan.
  6. Bake at 350 F for approx. 30 minutes.
  7. Let cake cool.
  8. Combine confetionary sugar and water to create frosting.
  9. Add frosting on top of the cake. This will be used to hold the fruit.
  10. Place raspberries and blueberries to form flag. Fill in the remaining white line to complete the flag with whipped cream.

Enjoy a slice of cake with a cup of coffee.☕ 🥄

Danish Flag Cake Recipe – Dannebrogskage

The Danish Constitution Day is on June 5th this year.  So we thought it would be fun to make a two layer Danish Flag Cake with custard, raspberries and plenty of whipped cream in celebration.  Dannebrog is the name of the Danish flag and it is the oldest in the world.

Ingredients

  • 1 1/3 cup flour
  • 1 cup sugar
  • 1/4 cup milk
  • 6 oz or 1 1/2 stick butter
  • 4 eggs – seperated, egg whites beaten stiff
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • custard
  • raspberries
  • whipped cream
  • frosting
Beat butter and sugar, add 4 egg yolks. Add milk w/vanilla extract. Add flour mixed with baking powder. Beat 4 egg whites stiff and add it to the mixture. Bake in pan greased with butter and flour at 425F for approx. 15 min.

Cut cake in half, add custard between the two layers. Add frosting to top layer and place raspberries to form flag with whipped cream forming a cross.

  Enjoy a slice of cake with a cup of coffee.

Swedish Sandwich Cake – Smörgåstårta


The Smörgåstårta isn’t exactly a cake because it is not baked. It isn’t exactly sandwich because it looks like a cake. Typically the Swedish Sandwich Cake has layers of seafood, fresh veggies, creamy spreads and soft fresh baked bread. However, there are hundreds of combinations to make a Swedish Sandwich Cake.
This type of sandwich cake is great to serve if  you have a large party such as for picnics, family reunions or even birthday parties. The colorful and decorative cake will be the talk of the party for sure. Everyone will wonder what is inside the cake. Once you slice into the cake you will uncover layers of different toppings.  You will need a knife and fork to eat the sandwich cake because it is not the typical sandwich.
 
Ingredients

  • 1 round sourdough 
  • cream cheese
  • cooked shrimp     
  • smoked salmon (or any other filling you prefer)  
  • cucumber  
  • chives (parsley or dill  
  • capers 
  • sliced hard boiled eggs and tomatoes

Instructions

Cut off top of the bread and slice it horizontally, so you have 3 pieces of the bread. Spread cream cheese on each layer,and place smoked salmon and cucumbers in between the two slices (add shrimp as well if you prefer). Cover the bread with cream cheese on top and the sides and add chives or dill on the side. On the top piece place shrimp, twisted cucumber slices, capers and a slice of the smoked salmon formed as a flower in the center of the cake. Place the finished bread on a plate with sliced eggs and tomatoes around it.
 

Almond Cake – Mandel Kage – Frangipan

This Danish Almond Cake ( also know as Frangipan  or in Danish Mandel Kage) is soooo easy to make and very few ingredients. Every person I serve this cake loves it! 

Serve the cake with fresh fruit, whipped cream or even ice cream. The almond cake will go fast!

Ingredients

  • 7 oz of almond paste, grated
  • 8 tblsp butter at room temperature
  • 1/2 cup granulated sugar
  • 3 eggs
  • 1/2 cup cake flour
  • Optional Toppings:  fruit, powdered sugar, whipped cream, frosting

Directions

  1. Mix almond pase, sugar and butter at low speed in mixer for approx. 2 min.
  2. Add the egges, one at the time, and beat it at high speed for appros. 2-3 min.
  3. Add flour and fold it into the batter without stirring.
  4. Add the batter to the buttered and floured baking pan and bake at 350F for approx. 30 min. 

 Remove from the baking pan and let it cool.

Below is a fun way to decorate the cake with strawberries.

Swedish Sticky Chocolate Cake Recipe – Kladdkaka


Are you planning to make something delicious for Valentine’s Day?  Here is an absolutely delicious and moist Swedish Sticky Chocolate Cake Recipe called Kladdkaka.  It is so easy to make too.  You family and friends will be impressed for sure. 
 
Ingredients

  • 1/2 cup melted butter
  • 1 1/3 cups sugar
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa
  • 1 tablespoon vanilla extract
  • 1 pinch of salt
  • Optional: whipped and strawberries for serving or dust with powdered sugar

 Instructions:

  1. Preheat oven to 300 degrees F
  2. Grease and flour a pie plate or a square baking pan
  3. Mix and beat sugar and eggs till smooth
  4. Stir in the flour and  cocoa
  5. Pour in the melted butter, vanilla extract and salt and stir till combined
  6. Pour the batter into the buttered and floured pie plate( or a square baking pan) and bake on the lower rack in the preheated oven for 35-40 min. or until the center has set.
  7. Let the cake cool before serving  
  8. Optional: Serve with whipped cream and strawberries or serve with a dusting of powdered sugar.

Danish Apple Cake – Herregårdsæblekage

Do you love apple desserts?  This is a delicious Danish apple cake recipe! Our family and friends loves this cake recipe.  We hope you will enjoy it too!



    Ingredients:

    • 13 tbsp butter
    • 2 cups flour
    • pinch of salt
    • 4 oz sugar
    • 1 egg
    • 2 tblsp cream

      Filling

      • 2 lb apples (approx. 5 large)
      • 1/3 cup sugar
      • 1/3 cup raisins
      • 1/2 cups almonds, chopped

       Topping (Remonce)

      • 6 tbsp butter
      • 1/2 cup sugar
      • 1/2 cup chopped almonds

      Garnish (optional)

      • 2 cups whipped cream
      Directions:

      1. Combine the butter with the flour, add salt, sugar, egg and cream.
      2. Let the dough rest in fridge for 1 hour or more before the dough is rolled out in 1/4″ thickness.
      3. Cut the dough into two round cakes- the size of the springform.
      4. The one cake is for the bottom, and the other for the lid, the rest of the dough is for the sides of the springform.
      5. Peel the apples and cut into thin slices.
      6. Layer into the cake-pan and sprinkle with sugar, raisins and chopped almonds.
      7. Add the”lid” and press the edges well together.
      8. Combine the topping, and stir until white.
      9. Spread the topping over the”lid” and puncture the dough with a fork.
      10. Bake in a 375F degree oven for approx. 1 hour.
      11. Serve lukewarm with cold whip cream.

      FROZEN Blue Velvet Kit-Kat Cake with Peppermint Pieces – Inspired by Disney Movie

      Here we show you how to make a FROZEN Kit-Kat cake. Super easy and fun ingredients Using yummy ingredients such as Kit Kat’s and Peppermint Pieces 
      Delicious combination of cool, refreshing peppermint, white chocolate Kit-Kat’s and a blue velvet cake.  YUM!


      Ingredients to Make the Frozen Kit-Kat Cake

      • One 8-inch blue velvet layer cake (your favorite recipe)
      • 2-1/2 cups cream cheese frosting (ready to spread or homemade)
      • 11 KAT Bars (2 packs of 6 full size white KitKats)
      • 2 cups of peppermint blue- white pieces
      • 1 cup of chopped peppermint pieces
       Utensils:
      • Spatula
      • Butter Knife
      • Cardboard and aluminum foil to make cake board.
      • Scissors 
      • Festive bow or other decorations. Ribbon long enough to tie around the cake.  Your choice of color but i used the same blue as in the peppermint pieces
      Directions:
      1. Prepare your favorite blue velvet cake recipe or desired flavor
      2. While the cake is baking make your favorite cream cheese frosting.
      3. Next carefully break KIT KAT Bar in half so it is a set of 2 sticks along the natural breaking points.
      4. Once the cake is baked and cooled we are ready to frost the cake
      5. You can slice the cake in half or in thirds if desired. 
      6. Then place the cake either on a cake board or a cake plate with enough room around the edge will be just fine. 
      7. Place about 1 tablespoon of frosting in the center of the board and set the cake round on top of it.  
      8. Place the frosting in the center of the cake and spread evenly out to the edges.
      9. Then sprinkle chopped peppermint pieces on top of the frosting.
      10. Repeat #8 and #9 same steps if you have additional layers of cake.
      11. Next use the remaining frosting to frost the sides of the cake. 
      12. Arrange kit kats along the outside of the cake.  Take sections of 2 (attached) sticks and line these up as close as you can. Press the kit kat’s against the cake. The frosting is the glue.
      13. Next fill the top layer of the frosted cake with peppermint pieces.  The frosting is the glue.  Also the Kit kats will hold the peppermint pieces too.
      14. An option is to tie a ribbon around outside of cake. Pull the ribbon slightly tight to keep the Kit Kat bars in place. 
      15. Place the kit kat cake in the refrigerator until when ready to serve.  You want the frosting to harden so the kit kat are on securely when you are ready to serve the cake. 
      16. When ready to serve slice the cake at every two Kit Kat bars. 

       Serve the peppermint blue velvet Kit Kat cake to your next Frozen party!
